Ingredients and alternatives
chocolate chip cookies are usually made of white sugar, brown sugar, flour, a small amount of salt, eggs, and a leavening agent such as baking powder and fats, usually butter or margarine, vanilla extract, and half-sweetened chocolate bars. Some recipes also include milk or nuts (like chopped nuts) in the dough.
Depending on the ratio of ingredients, mixing and cooking times, some recipes are optimized to produce crunchy cookies, while others produce crunchy cookies.
Regardless of the ingredients, the cookie-making process is fairly consistent in all recipes: First, whip up the sugars and fats, usually with a wooden spoon or electric mixer.
Next, eggs and vanilla extract are added, followed by flour and a leavening agent. Depending on the additional flavor, their addition to the mixture will be determined by the type of flavor used: peanut butter will be added with the wet ingredients while cocoa powder will be added with the dry ingredients.
Typically, basic ingredients such as chocolate chips and nuts are mixed at the end of the process to reduce breakage, before the cookies are cut and placed on the cookie pan.
Most of the cookie dough is baked, although some eat the dough as it is, or use it as an addition to vanilla ice cream to make chocolate chip cookie ice cream dough.
The texture of the chocolate chip cookies depends a lot on the fat and the type. A study by Kansas State University showed that carbohydrate substitutes containing fats were more likely to absorb more water. leaving less water to help spread the cookies while baking, resulting in the production of smoother, but not spreadable cookies.
